Catholic Recipe: Neapolitan Omelet

    INGREDIENTS

  • 3 cups leftover spaghetti with meatless tomato sauce
  • 4 eggs, lightly beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 Tablespoon minced parsley
  • 2 Tablespoons shredded Parmesan cheese
  • 2 Tablespoons olive oil
  • 1 garlic clove

The Neapolitan touch to this omelet is chopped spaghetti, Parmesan cheese, olive oil and garlic.

DIRECTIONS

Chop spaghetti; add eggs, salt, pepper, parsley, and cheese; mix well. Heat oil in frying pan with garlic clove. Remove garlic; pour in spaghetti mixture and cook slowly, turning once. Allow about 15 minutes cooking time for each side. Makes 4 servings.
