Catholic Recipe: Shirred Eggs

    INGREDIENTS

  • 1 Tablespoon heavy cream
  • 1 to 2 eggs for each ramekin

To shirr eggs is to bake them until they are set. Variations on the recipe are shirred eggs with cheese sauce or curried shirred eggs.

DIRECTIONS

Butter desired number of ramekins; add 1 tablespoon heavy cream to each. Break 1 or 2 eggs into each ramekin; sprinkle with salt, pepper, and paprika. Dot with butter. Arrange ramekins in shallow pan; bake at 350° for 12 to 18 minutes or until eggs are set.

Variations

Shirred Eggs in Cheese Sauce: Prepare 1-1/2 cups Medium White Sauce (see recipe). Add 1 cup grated sharp Cheddar cheese and 1 teaspoon prepared mustard; stir over hot water until cheese melts. Butter shallow baking dish, 10 x 6 x 2 inches. Pour in half the sauce. Break 6 eggs onto sauce; cover with remaining sauce. Bake at 325° for 20 to 25 minutes or until eggs are set.

Curried Shirred Eggs: Substitute 2 cups of any favorite curry sauce for cheese sauce and proceed as for Shirred Eggs in Cheese Sauce (see above).
