Catholic Recipe: Cocktail Sauce

    INGREDIENTS

  • 1/3 cup chili sauce
  • 1/3 cup tomato ketchup
  • 1 teaspoon minced onion
  • 1-1/2 teaspoons tarragon vinegar
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon salt
  • dash pepper
  • dash cayenne
  • 1 small garlic clove

Foreign chefs have taught us that the addition of a savory sauce can lift an ordinary food to epicurean heights. Cocktail sauce can be bought easily, but also made easily, without chemical additives.

DIRECTIONS

Combine 1/3 cup chili sauce, 1/3 cup tomato ketchup, 1 teaspoon minced onion, 1-1/2 teaspoon tarragon vinegar, 1 Tablespoon lemon juice, 1/4 teaspoon salt, dash pepper, and dash cayenne. Add 1 small garlic clove; chill. Remove garlic; serve. Makes about 3/4 cup.
