Catholic Recipe: Turbans of Sole

    INGREDIENTS

  • 1 package bread stuffing mix
  • 1/2 cup wheat germ
  • 1/4 teaspoon rosemary
  • 1/2 teaspoon savory
  • 1 small onion, minced
  • 6 to 8 fish fillets*
  • 2 Tablespoons butter or margarine
  • Shrimp Sauce (see recipe)

Rolling up the fillets and cooking in muffin tins makes this recipe unique.

DIRECTIONS

* Sole, flounder, halibut, and so on. Make a moist stuffing, following package directions. Stir in wheat germ, herbs, and onion; spread on fillets; roll up. Grease 6 to 8 large muffin cups; coat with additional wheat germ. Place 1 rolled fillet in each cup; dot with butter or margarine. Bake at 400° for 20 to 25 minutes or until fish flakes easily with a fork. Serve with Shrimp Sauce. Makes 6 to 8 turbans.
