Catholic Recipe: Broiled Small Whole Fish

Large whole fish may be broiled or grilled, indoors or out. Brush liberally with butter and wrap in two thicknesses of heavy duty aluminum foil. Keep surface of fish 4 inches away from source of heat, and broil, without turning, until the flesh flakes easily — about 20 to 25 minutes.

DIRECTIONS

Line cookie sheet with aluminum foil or grease thoroughly. Brush whole, cleaned fish inside and out with melted fat. Sprinkle inside and out with salt and pepper. Place on foil. Broil with surface of fish 3 inches below source of heat for 5 minutes. Turn; broil 4 to 5 minutes longer. Brush with melted butter or margarine several times during broiling. Serve with Cucumber Sauce (see recipe).
