Catholic Recipe: White Mountain Ring with Vegetable Salad

INGREDIENTS

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1/2 cup cottage cheese
  • 1/4 cup salad dressing
  • 2 Tablespoons chopped parsley
  • 2 Tablespoons minced pimiento
  • 2 Tablespoons chopped onion
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • dash Tabasco
  • 1/2 teaspoon salt
  • 3/4 cup heavy cream, whipped
  • crisp salad greens
  • Vegetable Salad (see recipe)

On the thirtieth of August we can honor the good St. Fiacre, patron saint of gardeners, with a recipe based on the fruits of the earth. This is a fancy gelatin mold, with a Vegetable salad in the center. His feast is no longer on the General Roman Calendar.

DIRECTIONS

Sprinkle gelatin on cold water to soften; dissolve over hot water. Cool slightly. Combine cheese and dressing; stir in gelatin, parsley, and next 6 ingredients; blend well. Fold in cream. Turn into 5-cup ring mold; chill until firm. Unmold on platter. Garnish with salad greens. Fill center with Vegetable Salad. Makes 6 to 8 servings.
