For a colorful, flavorful dish to serve on St. David's Day on March 1, try either this recipe or a tureen filled with delicious cream of leek soup made with a packaged dry soup mix. St. David is the patron saint of Wales.

DIRECTIONS

Remove roots and tops of leeks, leaving about 6 inches of green stalk; wash and slice. Soak 15 minutes in cold water. Cook 8 minutes in boiling salted water; drain. Chop pimiento; add with leeks to white sauce. Heat over hot water. Makes 6 servings.
