Catholic Recipe: Date and Nut Bread

    INGREDIENTS

  • 3/4 cup chopped pecans or filberts
  • 1 cup snipped pitted dates
  • 1-1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 Tablespoons shortening
  • 3/4 cup boiling water
  • 2 eggs
  • 1/2 cup sugar
  • 1-1/2 cups sifted all-purpose flour

Remembering St. Paul the Hermit's desert date palm and the bread the raven brought him, it might be fitting to bake a loaf of date and nut bread on his feast day, January 15.

DIRECTIONS

Mix first 4 ingredients with fork. Add shortening and water. Let stand 20 minutes. Beat eggs with fork. Add flavoring, sugar, and flour, beating with fork. Add date mixture, mixing just to blend. Pour into greased 9 x 5 x 3-inch loaf pan. Bake at 350° for approximately 1 hour, or until done. Cool in pan 10 minutes. Remove to rack. Do not slice until following day.
