Catholic Recipe: Cranberry Muffins

    INGREDIENTS

  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 2 cups prepared biscuit mix
  • 2 Tablespoons melted butter
  • 2 eggs beaten
  • 3/4 cup milk

Another time-saver for a busy mother are delicious Christmas morning muffins made in a jiffy when cranberries have been beforehand.

DIRECTIONS

Wash and clean the cranberries, cut them in halves, cover them with the sugar, and let stand overnight. Combine the other ingredients gently — don't worry about lumps — add the cranberries and fill well-greased muffin pans two thirds full. Bake in a 400° oven for 20 to 25 minutes. Makes 12 two-inch muffins.
