Catholic Recipe: Almond Horseshoe Cakes

  • 1 cup butter
  • 4 eggs
  • 1 cup sugar
  • 4-1/2 cups flour
  • 1/4 pound grated almonds
  • 1 grated lemon rind

Bake these almond horseshoe cakes in honor of St. Martin, who, according to legend, comes in the snow on his white horse each winter.

DIRECTIONS

Mix the ingredients in the order given. Beat well. Wrap the dough in waxed paper and chill. When the dough is cold, roll it one-fourth inch thick. Cut in the shape of small horseshoes. Bake in a moderate oven (325°) for about 15 minutes.
