Catholic Recipe: Fig Filling for Empanaditas

DIRECTIONS

Preheat the oven to 375 degrees F. Place the figs and sugar in the food processor and grind until finely minced. The sugar will keep the figs from becoming too sticky. Place in a small saucepan with the water, milk, lemon zest, lemon juice, and butter.

Simmer for 10 minutes or until filling is juicy and a bit thickened. Cool and stir in the walnuts.

Place a couple of heaping teaspoons of fig filing on half of each circle of dough and fold to make an empanadita. Press the edges with a fork to seal. Use a fork to poke a row of holes across the tops. Place on an ungreased baking sheet, preferably lined with a baking parchment. Bake until golden around the edges, about 15 minutes.
