Catholic Recipe: Peach or Blueberry Cobbler II

    INGREDIENTS

  • 3 fresh peaches, peeled, pitted, and sliced
  • 1 teaspoon ground cinnamon
  • 1-1/2 cups white sugar
  • ½ cup shortening
  • 1 cup white sugar
  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 3 Tablespoons butter
  • 2 cups boiling water

This delicious cobbler can also be made with blueberries.

DIRECTIONS

Preheat oven to 350. Grease a 7x11 inch baking dish. Stir together peaches with cinnamon and 1-1/2 cups sugar. Set aside. In a medium bowl, beat shortening and 1 cup sugar. Mix in flour, baking powder, and salt alternately with milk. Pour into prepared pan. Top with peach mixture. Drop butter in boiling water and pour over peaches. Bake in the preheated oven for 40 to 45 minutes or until golden brown.
