Catholic Recipe: Southern Potato Salad

    INGREDIENTS

  • 5 lbs. potatoes
  • 1/2 of 32 oz jar of Miracle Whip Salad Dressing
  • 1/2 onion (more or less depending on your taste)
  • 1 tabl. salt
  • 3 tabl. mustard
  • 1/2 jar sweet pickle chips
  • 2 boiled eggs

This salad makes a nice complement to the grilled hamburgers.

DIRECTIONS

1. Cut potatoes in chunks (smaller) and boil until very soft. 2. Drain and add 1/2 jar of Miracle Whip. As you stir try to mash the potatoes. 3. Add salt, mustard and pickel chips. Continue to stir and mash. 4. Stir in onions and lastly the chopped up boiled eggs.

The secret of this salad is to prepare it while the potatoes are hot and to mash it as much as you can. This is a favorite in East Texas. The result is a slightly sweet taste which many people seem to enjoy.
