Catholic Recipe: Mexican Bread Pudding

  • 2 teaspoons cinnamon
  • 1 cup brown sugar
  • 6 slices toasted bread
  • 1 1/2 cups longhorn cheese — grated
  • 1 cup raisins
  • 1 cup pecans — chopped
  • pinch salt

Lenten Recipe served especially on days of abstinence from meat (also for the feast of Our Lady of Guadalupe).

DIRECTIONS

Place a layer of bread in casserole, and alternate with cheese, pecans and raisins until all ingredients are used. Make at least two layers.

Dissolve brown sugar and cinnamon in water, pour over bread mixture and bake in a moderate oven at 350 degrees until all liquid is absorbed (about 1 hour).

Serve hot or cold, as dessert or part of a meal.
