  • 1 clove garlic, crushed
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. vinegar
  • 1 head escarole

Salad to accompany suggested feast for St. Joseph's Day as celebrated in Valencia, Spain.

DIRECTIONS

Mix oil with garlic, salt and pepper. Add vinegar. Mix thoroughly. Pour over washed and drained salad greens.
