  • Origin:

The Feast of St. Michael on September 29 has become a combined feast for the archangels Michael, Raphael and Gabriel. This feast is also called Michaelmas.

This chestnut dressing is a good companion for the Michaelmas or Martinmas goose.

If you need a good source for obtaining fresh chestnuts you can order them from the Correia Chestnut Farm.

DIRECTIONS

Shell, skin, and boil the chestnuts in salted water until tender. Mix with the remaining ingredients and, if the stuffing appears to be too dry, moisten with 1/2 cup heavy cream.
