Catholic Recipe: Ambrosia Salad

    INGREDIENTS

  • 1 cup sour cream (substitute with fat free or light sour cream, or plain yogurt)
  • 1 cup flaked coconut
  • 1 cup miniature marshmallows
  • 1 can (11 oz.) unsweetened Mandarin oranges (drained)
  • 2 can (20 oz.) unsweetened crushed pineapple (drained)
  • 1/2 cup chopped walnuts or pecans (optional)

Although most of us can't make it to Milan for the festival of St. Ambrose in May, we can celebrate St. Ambrose's real feast day, December 7, by making recipes with honey or making an "ambrosia", or fruit salad. There are quite a variety of ways, the recipe below is just one of the multitude.

DIRECTIONS

Put all ingredients into large bowl and mix well. Put in refrigerator overnight. Serve the next day. (Alternately, make in the morning and serve in the evening.)
