Catholic Recipe: Shortbread Cookies

    INGREDIENTS

  • 2 cups sifted all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup sugar
  • 1 cup vegetable shortening
  • 1/2 teaspoon almond extract
  • 1 egg yolk
  • colored sugar

DIRECTIONS

Sift flour with soda and salt. Cream shortening until fluffy. Gradually add sugar and soda, blending thoroughly. Add dry ingredients, almond extract, egg yolk. Turn onto lightly floured board. Pat to hold together. Take tablespoonfuls. Roll into balls. Pat flat. Make small depression in center, using thumb. Place rounds on greased baking sheet. Bake 15 minutes at 375°. Remove from oven. Place colored sugar in depression. Return to oven 10 minutes longer, until golden brown. Yield, 3 dozen
