Catholic Recipe: Horseradish and Beets

    INGREDIENTS

  • 6 medium beets, cooked (about 2 pounds)
  • 1 cup grated horseradish
  • OR
  • 2 tablespoons prepared horseradish
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 2 tablespoons salt

DIRECTIONS

Combine ingredients in blender. Blend thoroughly about 3 minutes, adding liquor from cooked beets if mixture becomes too stiff. Season with sour salt if desired. May be used as a dip. Yield, 4-6 servings
