Catholic Recipe: Omelet Neapolitan

    INGREDIENTS

  • 3 cups leftover spaghetti with non-meat sauce
  • 4 eggs, lightly beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon minced parsley
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons olive oil

DIRECTIONS

Cut up spaghetti. Add eggs, salt, pepper, parsley, Parmesan cheese; mix well. Heat oil in skillet. Cook mixture over low heat 15 minutes each side. Fold. Serve with sauce spooned over top. Yield, 4-6 servings
