Catholic Recipe: Cold Salmon with Green Sauce

    INGREDIENTS

  • 2 cups cooked rice
  • 2 salmon steaks, cooked, cold
  • 3 egg yolks
  • 1 tablespoon vinegar
  • salt, pepper
  • cayenne pepper
  • 1 1/2 cups oil
  • 4 tablespoons cooked, chopped, strained spinach
  • 2 tablespoons cream

Also Called: Saumon froid à la Sauce Verte

DIRECTIONS

Arrange rice on platter while warm. Arrange cold salmon on top of warm rice.

Beat egg yolks, vinegar, seasonings together. Add, beating constantly, oil, spinach, cream. Pour over salmon, rice. Serve immediately.

Yield, 4 servings

(Side note: This recipe contains raw egg yolk.)
