Catholic Recipe: Kaesekuchen (Cheese Cake)

    INGREDIENTS

  • 2 pounds cottage cheese
  • 2 cups sugar
  • 1/2 cup sifted all-purpose flour
  • 1 teaspoon salt
  • 10 eggs, separated
  • 1 cup light cream
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • 1 pound cookies or graham crackers
  • 1/2 cup sugar

DIRECTIONS

Sieve cheese. Combine with 2 cups sugar, flour, salt. Beat egg yolks; add to cheese paste. Combine with cream, cinnamon, vanilla. Beat egg whites until stiff, but not dry; fold into cheese mixture. Crumble cookies; add 1/2 cup sugar. Grease baking sheet. Cover sheet with layer of 1/4 crumbs; add 1/2 the cheese paste; top with 1/4 crumbs. Repeat for second cake. Bake 1 hour at 350°. Yield, 2 cakes
