Catholic Recipe: Artichokes Italian Style

    INGREDIENTS

  • 4 artichokes, prepared for cooking
  • 1/4 cup vegetable oil
  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon oregano leaves
  • 1 tablespoon chopped parsley

DIRECTIONS

Cook artichokes 30 minutes in saucepan in boiling water to cover. Drain; reserve liquid. Heat oil in saucepan; add remaining ingredients. Sauté 5 minutes. Reserve. Place artichokes upright, close together, in deep round baking pan. Pour in 1 inch of reserved liquid. Pour sautéed onions, herbs over artichokes. Cover. Simmer 45 minutes. Serve with small cup of liquid for dipping. Yield, 4 servings
