Catholic Recipe: Stracciatella (Italian Easter Soup)

  • 2 eggs, beaten
  • 1 tablespoon grated
  • Parmesan cheese
  • 2 teaspoons fine semolina
  • 3 cups chicken broth, divided

DIRECTIONS

Combine eggs, cheese, semolina, 1 cup broth; beat well. Bring remainder broth to boil in a saucepan. Add egg mixture gradually, beating constantly with a wire whisk. Cook 5 minutes. Serve immediately.
