Catholic Recipe: Noodle Pudding with Plum Jelly

    INGREDIENTS

  • 3 tablespoons bread crumbs
  • 1/2 pound broad noodles, cooked, hot
  • 4 tablespoons butter
  • 3/4 cup sugar, divided
  • 2 eggs, beaten
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1/2 teaspoon grated lemon rind
  • 1/2 teaspoon ground cinnamon

DIRECTIONS

Grease springform pan; coat with bread crumbs. Combine noodles, butter, 1/2 cup sugar, eggs. Mix thoroughly. Put 1/3 noodle mixture in pan. Cover with layer of combined nuts, raisins, lemon rind, 1/4 cup sugar, cinnamon. Top with another 1/3 noodle mixture. Make thick layer plum jelly. Top with last 1/3 noodle mixture. Bake 20 minutes at 375°. Cut into wedges; serve hot. Yield, 8 servings
