Catholic Recipe: Potato Rolls

    INGREDIENTS

  • 1 package active dry, or cake, yeast
  • 1/2 cup lukewarm potato water
  • 1 cup hot milk
  • 3/4 cup shortening
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 1 cup mashed potatoes
  • 8 1/2 cups sifted all-purpose flour, divided

From the Ukraine we have this recipe for wonderful potato rolls to serve with your main meal.

DIRECTIONS

Dissolve yeast in potato water. Pour hot milk over shortening, sugar, salt; stir until shortening is melted. Add mashed potatoes; mix thoroughly. Cool. Combine with yeast. Add 1 cup flour; beat well. Cover; let rise until bubbly. Beat in remaining flour; knead until smooth. Place in greased bowl; cover; let rise until double in bulk. Turn out on floured board. Roll out 1/4 inch thick. Cut in 2-inch rounds. Brush with butter; put together in pairs. Bake 25 minutes at 400°.
