Catholic Recipe: Mushrooms and Rice


  • water to cover
  • 1/4 teaspoon salt
  • 3 tablespoons tomato paste
  • 2 tablespoons minced parsley
  • 1/3 cup olive oil
  • 2 1/2 cups fresh sliced mushrooms
  • 1 cup minced onions
  • 1/2 clove garlic, minced
  • 2/3 cup uncooked rice

Heat olive oil in skillet. Sauté mushrooms in oil. Drain oil into heavy covered heat-proof dish. Reserve mushrooms. Reheat oil. Sauté onions and garlic until golden. Add rice, stirring until rice becomes yellow (about 8 minutes). Cover with water at least 1/2 inch above rice. Add salt, tomato paste, parsley, mushrooms. Put mixture into baking dish. Cover tightly. Bake 45 minutes at 375°, or until all liquid is absorbed. Yield, 4 servings
